To install new tracks, you usually copy the mod folder into C:Program Files (X86)Steamsteamappscommonassettocorsacontenttracks. Again, you might find the mod has nested folders which require the removal of the highest level.

Reading the cxlog file, I found this message quite interesting wine: Read access denied for device L"\??\Z:\", FS volume label and serial are not available. Is the game installed on a partition different from the system one? If yes that partition is ext4 type or NTFS type? Does the game work but crashes before you can actually play or won't even start? I had a similar issue with Crash bandicoot on proton the game worked from main menu to the level selection area, but once I entered a level the game used to freeze, the fix was simple installing the game into the default steam folder into my system partition.
I installed a tech demo of assetto corsa, I've managed to make it work. I'll give you my recipe: win7bottle(64 bit was mandatory else it will crash), you must install these components before the game is installed else it won't work dotnet4.0 directx for modern games and dxvk I used the latest version 1.7.2 ( the latest mesa or nvidia proprietary driver are mandatory else dxvk won't work). Let me know if this trick worked
The tech demo was not on steam I've downloaded on a website, to install the latest version of dxvk -1.7.2.tar.gz. Download the tar archive, then install dxvk on your bottle as you normally would, but before press continue to finish the setup check the source file tab and choose the option to select a local source file, a selection window will appear just select the tar file you donwloaded. The tech demo could be an older version of assetto corsa or simply could be very different from the final product, so it's not guaranteed that the game would work as well. One thing 64 bit bottle is mandatory and so is net framework 4.0, without these requisites I couldn't even get to the splash screen, dxvk and directx for modern games are needed only if the game could not render correctly or it stutters a lot. Do not install the components from the application, install net framework and eventually directx from crossover . Hope it works for you. A caveat for you dxvk version other than the one provided from crossover could not work on mac,I forgot about that, so you better stick with the version provided from crossover
The showroom is actually using rendering so if that works there are no problem with DXVK, the problem might be the launcher itself, maybe you can bypass it, select the bottle where AC is installed and choose execute a command icon, a pop up will appear select an exes to run, in the file explorer menu browse into assetto corsa folder and choose different exe tu run. The launcher in the tech demo was clunky so I used to start the game selecting AC.exe I was able to enter the demo bypassing the launcher, let's see if that's the case. Using this trick I was able to install Rockstar games launcher and many other application, because often many software works but launchers are broken.
Next, download the files from the second link (in the picture above), unzip traffic.json and surfaces.ini and copy them into C:\Program Files (x86)\Steam\steamapps\common\assettocorsa\content\tracks\soyo_daikoku\pa\data
